When I applied to culinary school at the New England Culinary Institute in Vermont I was asked to write an essay describing my ideal dining experience. I wrote about eating in a small restaurant, surrounded by friends and loved ones, enjoying artisan style pizzas, drinking good wine and good beer, laughing and having fun. Lola’s was just a twinkle in my eye at the time, and little did I know that seven years later I would be opening the restaurant I had described in my essay.
What drew me to the idea of opening a restaurant such as Lola’s was the energy I felt when imagining it. I liked the idea of creating a laid back place where people could come to connect with friends and loved ones. These moments for me is what life is all about.
So much more than I had expected has come from opening Lola’s. I have met an amazing group of people who are customers, employees, delivery drivers, vendors, farmers, the list goes on. At the heart of it all continues my belief that it is around the table that we learn about ourselves and about the world. Please come join us around the table at Lola’s.
